Store the copies on two different media. Keep one backup copy offsite. That works, but it just a single medium, and not offsite. Also, that backup should be encrypted. Additionally, you usually want to look into a cloud solution which would be another copy of the data and it would be off-site. This would be one form, if not a form of redundancy as opposed to "backup", of mitigating hardware failure. But as mentioned, the rule is the absolute best policy as it's described here.
